Mushroom Strudel

I made this for Rosh Hashana and people liked it.
The recipe is for 10, and it is really for 10.

Here is the recipe with all my comments.

INGREDIENTS:

  • 1.5kg cup mushrooms, sliced- ADVISE: mushrooms absorve a lot of water when washing, and you will need to dry this water while cooking so better squeeze them with your hands 
  • 100g butter, chopped
  • 4 garlic cloves, crushed
  • 2 large brown onions, finely chopped
  • 1/3 cup Beef stock (PARVE) (Could be chicken)
  • 2/3 cup thickened cream -Check out for Gelatine in the ingredients, Gelatine is "meat" 
  • 1 tablespoon balsamic vinegar or red vinegar
  • 1/3 cup flat-leaf parsley leaves, finely chopped
  • 50g parmesan cheese, finely grated
  • 2/3 cup fresh white breadcrumbs
  • 12 sheets filo pastry - THAWED
  • olive oil cooking spray or Regular Olive oil and a brush



METHOD
Have all the ingredients separated in bowls before you start.


  1. start melting butter in a large saucepan over medium-high heat. Once is Melted, add the garlic and onions. Cook, stirring occasionally, for 5 minutes or until feels soft. Add the mushrooms. Unless you have a very huge saucepan, you will need to put them in batches.  Cook, stirring often, for 10 to 15 minutes or until juice evaporates. or at least most of it. You can also take a little bit of the juice with a cup. 
  2. Add the stock and cook for 2 minutes. then add the cream and vinegar. Simmer for 3 minutes or until sauce thickens. If it doesnt, you can add a little bit of flour to make it thicker. 
  3. Transfer mushroom mixture to a bowl. Add parsley, parmesan cheese and breadcrumbs. Season with salt and pepper. Mix well. Set aside to cool completely.
  4. Preheat oven to 190°C. Place 1 sheet pastry on a workbench. be sure is thawed. Spray with oil. Top with another pastry sheet and spray with oil. Repeat using 4 more pastry sheets. Spoon half the mushroom mixture along 1 long edge of pastry. Fold ends in and roll up tightly to enclose filling. Place strudel on a flat, lined baking tray. Repeat with remaining pastry, oil and mushroom filling to make a second strudel. be sure you have a long enough baking device and it fits your oven. alternatevily you can cut the pastry in half. 
  5. Spray strudel tops with oil and you can add some sesame or poppy seeds. Bake for 40 minutes or until golden and crisp.

Si, es verdad! Después de orkut (o antes, en realidad no lo se) vemos una proliferación imensa de sitios de relaciones, intercambios, grupos, personas, deseos, fotos, y lo que nos imaginemos. Orkut Flickr Last.fm 43things Blogs Fotologs etc, etc, etc. Será que ya llegamos al punto que somos tan dependientes de la tecnologia que no somos capaces de salir de casa y hacer amigos a la moda antigua? O será que virtualmente hoy en dia nos parece mas facil porque podemos pintar la imagen que queramos y es una manera de esconder la realidad? Que pasa con la realidad? no se...este post va a tener parte 2...lo voy a pensar un poco. por favor, diganme que opinan??? Bandana Bib / Dribbling Bib

Now that my child blows raspberry and dribbles non stop, I thought I would make a bandana / Dribble bib for him. It looks so cute and I thought that I could definitely make some myself. So here are the instructions. Ideally you will need to different pieces of fabric. One of them I made towel and jersey, other I made flannel and towel. Any absorbent fabric really would do, but I like the idea of towel ish fabric to absorbe the dribble and stop it from getting into his t-shirt. Specially now that the weather is so cold here in sydney. You will cut a triangle of fabric. the base/wider side should have around 43 cm. So fold in the middle and allowing 2 cm to give it the needed shape (its not a perfect triangle) measure from the end to the middle 30 cm. I reckon the drowing will make more sense. You can do it with paper and use it as a pattern, or you can do it with one piece of fabric and than cut the other one based on the first one. Anyway, put right sides togeth...

News From Spain # 2

San lorenzo de el escorial Originally uploaded by viclic . Sabado fomos a um Lugar chamado San lorenzo de el escorial. é bem bonito, fica nos alrededores de madrid. Esta é a vista do Patio. Bom, segunda feira comecaram as aulas, parece que o curso vai ser bom. Na minha classe tem 10 pessoas. eu e a Lu do brasil, um chileno, uma peruana e um argentino (os telefonicos) e 5 espanhois. A Esic é uma faculdade muito ¨pija¨. (Pija quer dizer Mauricinho, Fresco, etc...), tanto que pra quem curte carroes, o estacionamento é um PATIO cheio, tem porsche, mercedes conversivel, e etc...e chama muito atencao, nao tem como nao olhar, ne? Bom, esta semana foi meio estranha. Tivemos aula na segunda, que foi o primeiro dia, comecou mais cedo porque teve o que eles chamam de inauguracao do curso e etc...Terca tambem, aula normal...MAS como quarta foi feriado, terca a noite, esta cidade estava numa esbornia TOTAL, regada a muita chuva e Muitas cañas (cañas sao chopes para quem nao sabe).
